Oil preserves

We make preserves with the vegetables we grow on our farm. Our aubergines, zucchini and artichokes are all local varieties and as such perfectly adapted to our soil and with a rich flavour that makes them highly recommended for preserves.

Aubergines, zucchini and peppers are grilled and peeled manually. They are put in jars with extra virgin olive oil. Artichokes require a keen manual treatment in order to keep their firmness and their flavour throughout the preparation.

Pomodori secchi (dried tomatoes)

Ingredients: dried tomatoes, extra virgin olive oil, apple vinegar, garlic, pepper and sea salt

Peperoni arrostiti (grilled peppers)

Ingredients: peppers, extra virgin olive oil, apple vinegar, grape juice, garlic and sea salt

Melanzane arrostite (grilled aubergines)

Ingredients: aubergines, extra virgin olive oil, wine vinegar, grape juice, garlic, oregano, sea salt

Zucchine arrostite (grilled zucchini)

Ingredients: zucchini, extra virgin olive oil, wine vinegar, grape juice, garlic, oregano, sea salt
